Dilshan Madawala

Dilshan Madawala, the chef/owner of Dila's in San Miquel de Allende, Mexico, combines the flavors of his native Sri Lanka with available Mexican foodstuffs and produces a product that is clearly superior to the sum of its parts. Although the fish curry soup, lamb buriyani, and Vietnam rolls were all excellent, we were particularly intrigued with the sauteed cucumber and eggplant that appeared on the Mediterranean salad. Because Dilshan was nice enough to explain its rather simple preparation, we will try it at home.
